Crack the eggs into a shallow dish and whisk together with the salt, black pepper, and paprika until well combined
Heat a non-stick skillet over low heat and pour in the egg mixture
Let it cook until it starts to set
Spread the mushrooms evenly over the top and flip with a spatula
Remove from heat and roll up tightly onto a plate
Serve immediately.
