In a bowl, combine the ground beef, eggs, 1/4 cup of wheat flour, cooked ham, stale bread, parsley, and Parmesan cheese
Temper the mixture
Mix well until the ingredients are fully incorporated and will not break apart during cooking
Shape the mixture into a log about 23 cm long
Dust the log with 1/4 cup of wheat flour and then coat it in 2 tablespoons of oil (this step is crucial to prevent the polpetone from breaking)
Heat butter and oil in a pan over low heat
Carefully place the polpetone into the pan, frying on all sides until golden brown
Add the dry white wine and let it simmer
Add beef broth, cover the pan, and cook for 1 hour and 30 minutes (or longer if necessary)
Let it cool down
Slice the polpetone thinly, arrange it in a serving dish, and top with hot sauce
