In a large skillet, over high heat, sauté the onion and garlic in olive oil, stirring constantly with a wooden spoon, until the onion is soft (approximately 1 minute)
Add the red bell pepper, green bell pepper, chopped parsley, ground beef, salt, and finger pepper, and cook, stirring occasionally, until the beef is tender (about 15 minutes)
Add the sliced mango to the mixture with the beef (reserve some slices for garnish), stir carefully, and let it warm up (approximately 1 minute)
Transfer to a bowl, garnish with the reserved strips cut in half, and serve immediately
