To make the sauce, cook the onion in butter or until it's soft but not golden
Then add the flour and mix well
Add the salt, black pepper, and stir to combine
Add the milk and cook, stirring constantly, until the mixture thickens and bubbles
Cook for an additional 2 minutes
Remove from heat
Place half of the potatoes in a buttered baking dish
Cover with half of the sauce, repeat the layers, finishing with the sauce
Cover with aluminum foil and bake in a preheated oven at 200°C (400°F) for about 45 minutes
Remove the foil and bake for an additional 10 minutes or until the potatoes are tender
Serves 6
Variation: reduce the salt slightly and add 3/4 cup of grated cheddar cheese.
