Remove the pulp, leaving a 0.5 cm lateral edge and a 2 cm bottom edge
Step 2
In a pot, place the vegetable broth and bring to a boil
Add the zucchini and cook for three minutes
Drain the broth and let the zucchini sit on paper towels to dry
In a bowl, combine the breadcrumbs, tomato, salt, olive oil, and parsley leaves
Stuff the zucchinis and serve immediately
