1 pound of peeled and thinly sliced potatoes
4 medium-sized onions, finely chopped

1 cup of heavy cream
1 cup of milk
1 tablespoon of finely chopped green scallion
1 pinch of salt

Sauté the onion for 5 minutes in a large pot
Add the potatoes, salt, and enough water to cover them
Bring to a boil at high heat, then reduce the heat and simmer for 45 minutes
Blend in a blender or food mill
Cool
Chill in the refrigerator for at least one hour
Just before serving, add milk and cream
Season with black pepper to taste, adjust seasoning as needed, and garnish with finely chopped scallion.
