Cook the sweet potato with its skin
Let it cool, peel, and cut into slices
Arrange layers of sweet potato alternating with banana slices in a well-greased baking dish
Sprinkle a pinch of sugar on each layer, followed by small pieces of butter and a dash of lemon juice
The final layer should be bananas
Cover with small pieces of butter and add orange or papaya juice
Bake in a moderate oven for about 30 minutes
This dessert can also make an excellent accompaniment to meats if you sprinkle salt and pepper over each layer of sweet potato as you go
Serve warm.
