    Sweet potatoes can also be prepared like chips. They become crispy and have a firmer texture than regular sweet potatoes. This makes them an excellent snack or side dish for roasted meats, poultry, or game. To peel the sweet potato, submerge it in cold running water, as it has a skin that 'sticks' to your hands. Cut into thin slices, wash again, and dry thoroughly on paper towels. Fry in hot oil until starting to brown. Drain on paper towels. Season with salt to taste.
