Peel the sweet potatoes
Wash them, dry them, and cut them into small cubes
Let them caramelize slightly in butter for about 10 minutes
Add 200 g of sliced mushrooms, then heavy cream and a splash of Madeira wine
Season with salt and pepper and let it cook over low heat for about 20 minutes
If the cream starts to thicken or curdle, stir gently
Serve hot.
