4 large potatoes
4 tablespoons of olive oil
6 tablespoons of cream cheese
4 tablespoons of ricotta cheese, well drained
salt and parsley to taste

Wash the potatoes thoroughly with their skins on
Use a fork to poke holes all over the surface
Brush them with olive oil and place them directly onto the preheated oven rack until they're soft
Remove from the oven and cut in half lengthwise through the center of each potato
Fill with a mixture of ricotta cheese and cream cheese
Season with salt and parsley
Serve hot.
