Wash the potatoes with their skins
Peel and cut into sticks
Place in a colander and rinse under cold running water until excess starch is removed
Drain well on a plate
Heat the oil in a high-sided frying pan
Fry the potato, in batches, over medium heat until it starts to brown
Drain on paper towels and sprinkle with salt
Serve 4 portions
