2 tablespoons of butter
4 cloves of garlic, minced
4 medium onions, thinly sliced
5 medium sweet potatoes, peeled and sliced into 0.5 cm thick rounds
3/4 cup heavy cream
1/2 teaspoon black pepper
1/2 teaspoon nutmeg
1/4 teaspoon cayenne pepper (optional)
1 teaspoon salt
3 tablespoons chopped fresh parsley

Preheat the butter in a baking dish and microwave on high for 1 minute
Add the garlic and onion, mix well, cover, and microwave on high for an additional 10 minutes
Stir every 3 minutes
Add the sweet potatoes and cook for an additional 5 minutes, with the dish uncovered, on high heat in the microwave
Combine the heavy cream and remaining ingredients
Microwave on high for 5 minutes, until the sweet potatoes are cooked through
Let it rest, covered, for 5 minutes before serving
If desired, add 1/4 cup grated Parmesan cheese along with the heavy cream.
