In a microwave-safe dish, combine the butter and onion
Microwave on high for 3 minutes
Add the chicken breast seasoned with salt and pepper
Cook for an additional 2.5 minutes on high
Mix halfway through
Add the flour gradually and mix
Combine the remaining ingredients and cook on high for another 3 minutes
Mix halfway through, remove from microwave, and reserve
Place the potatoes in a microwave-safe dish (make holes in all of them with a fork) and microwave on high for 10 minutes or until they are mashed
Serve the potatoes cut in half filled with the reserved chicken cream
