1 Mix the mayonnaise with the garlic and reserve at room temperature until serving time
2 Place the potatoes in a pot and add enough water to cover them
Add salt and bring to a boil, then reduce heat and simmer for 5 minutes
Remove from heat, cover, and let rest for 15 minutes
Drain and dry the potatoes very well with paper towels
3 Heat the olive oil and, when it's hot, fry the potatoes in batches until they're golden brown and crispy
Remove from heat and drain on paper towels
Arrange the potatoes in a serving dish and place the reserved garlic mayonnaise sauce in the center
Arrange toothpicks or skewers nearby for people to serve themselves.
