1/2 kg of very small sweet potatoes
1 jar of cream or Minas cheese or ricotta
1 tablespoon of lemon juice
2 tablespoons of finely chopped green onion
2 tablespoons of finely chopped parsley
2 tablespoons of pickled cucumber, well-chopped
salt and pepper to taste

Boil the sweet potatoes with their skins in salted water until they're tender but still hold their shape
Let them cool and peel
Using a melon baller (for melon), remove some of the pulp from the sweet potatoes
Mix the cream with the remaining ingredients and fill the sweet potatoes
If desired, sprinkle with a little paprika.
