1/2 kg of cooked and sliced beets (reserve 1 cup of liquid from cooking)
1 can of condensed pineapple juice (reserve the juice)
2 tablespoons of cornstarch
1 tablespoon of grated ginger
1 and 1/2 tablespoons of vinegar
salt and black pepper to taste
2 tablespoons of butter or margarine

In a small saucepan, combine the cooking liquid from the beets, 1 cup of condensed pineapple juice, cornstarch, grated ginger, vinegar, and butter or margarine
Cook until thickened
Season with salt and black pepper
Add the chopped pineapple and beets
Serve hot or cold
