Heat a non-stick skillet over medium heat
Brush with a little olive oil and add the sliced garlic-poró and nuts
Stir constantly until golden brown
Set aside
In individual serving plates, place the sweet potato, spinach, and using a fork, gently combine without mashing the sweet potato too much
Drizzle with the remaining olive oil and season with salt and black pepper
Top with the mixture of nuts and garlic-poró.
