3 large artichokes
salt and pepper to taste
60g of butter or margarine

Cut the artichokes into four parts, after they have been prepared according to instructions
Fry in boiling water for 5 minutes
Drain and place in a shallow baking dish
Mix the salt and pepper with melted butter or margarine
Pour over the artichokes
Cover and bake in a moderate oven for about 25 minutes or until the artichokes are tender
Garnish with strips of red bell pepper in brine and serve with hollandaise sauce (see recipe)
