Cook the beetroot for half an hour with the onion, vegetable stock, and herbs
Let it cool down and then refrigerate
Blend the mixture in a blender with the cooking stock
Add olive oil, salt, black pepper, and wine
Strain through a sieve and chill in the refrigerator.
