2 or 3 red sweet potatoes

Wash and cut the sweet potatoes in half without peeling
Remove the seeds and a portion of the pulp, leaving about 1 inch of thickness around to form a kind of vessel
Chop the pulp into small cubes, mix well with all ingredients, add a bit of mayonnaise to bind and fill the sweet potato halves
Garnish each one with a raspberry
Serve 4 to 6 portions.
