Ingredients:
500g penne pasta
250g cottage cheese (or 1 small pot)
10 black olives, pitted
2 tablespoons chopped scallions
15 large mint leaves
2 tablespoons chopped fresh parsley
4 tablespoons olive oil
400g cherry tomatoes, halved
Salt and pepper to taste

Bring a large pot of salted water to a boil
Add the penne pasta in batches, cooking until al dente

Meanwhile, mix together the cottage cheese, black olives, scallions, mint leaves, parsley, and olive oil
Season with salt and pepper to taste

Drain the cooked pasta and rinse it with cold water to prevent sticking
Allow it to cool slightly
Mix the cooled pasta with the prepared cottage cheese mixture and add the cherry tomatoes
Check the seasoning and serve.
