If necessary, add more flour to achieve the right consistency
Shape the dough into a ball and let it rest for 1 hour or longer, until it becomes stiff enough to be grated
Grate the dough coarsely or pierce it thoroughly
Spread it on a paper towel or cloth and allow it to dry completely
Store it in a plastic bag or airtight container
Cook in broth or consommé for 15 minutes
Prepare about 2 cups of massina for 4 to 6 servings.
