1 Season the spinach with salt and black pepper. Reserve
In a pan, place the water and butter
Bring to a boil and let it rise
Mix the flour with the nutmeg and add it to the pan at once, stirring well until the mixture separates from the sides of the pan
2 Remove from heat and join the eggs, one by one, stirring well with a wooden spoon
Add the spinach and mix again
Remove spoonfuls to make the fritters, filling half a spoon (soup) each time
3 In a frying pan, heat the oil very well and fry the fritters
