20 slices of beef
20 small round crackers
1 large cucumber
Salt to taste

Slice the cucumber into thin rounds and sprinkle with salt. Reserve
Cut the crackers in half and spread mayonnaise on one side
Assemble by placing a slice of beef, a round of cucumber, and a dollop of jalapeño jelly onto each cracker
Distribute the popsicles, closing them, and secure with skewers
Decorate with thinly sliced pickled red onion and serve immediately.
