Mix the Roquefort cheese, butter or margarine, salt, and pepper until well combined
Blend thoroughly to obtain a paste
In a frying pan, quickly fry the steaks in hot oil, one side only
Remove the steaks from the pan and spread the Roquefort mixture over the fritted side of the steaks
Place the steaks back in the pan and let them cook slowly on the other side, covered
In the end, sprinkle with chopped parsley and serve immediately
