1/2 pound of beef strips
2 garlic-porphyry cloves (use only the white part)
2/3 cup grated Parmesan cheese
1 cup all-purpose flour
2 tablespoons butter
1 tablespoon olive oil
1/2 cup white wine
Salt and black pepper to taste

Cut the garlic-porphyry in half lengthwise
Wash it well and cook it in boiling water with salt until tender
Drain and reserve
Shape the beef strips into rectangles and place a garlic-porphyry on each strip
Add the cheese
and sprinkle with salt and pepper
Roll up the beef and secure with a toothpick
Coat the beef in flour and reserve
Heat the butter with olive oil and add the beef
Brown it well and remove from the pan
Keep warm
Add the white wine to the pan and let it reduce until thick
Return the beef to the pan and stir for 1 minute
Serve immediately.
