1 cup (180 g) unsalted butter, at room temperature

1/2 cup shredded coconut
strawberry or banana filling for the center (see recipe)

Mix together the butter, sugar, egg, and vanilla in a bowl
Beat well until light and fluffy
Add the flour, baking powder, and coconut
Mix well
Form balls using 1 1/2 teaspoons of dough each
Place on greased baking sheet
Poke with a fork
Bake at moderate temperature (180°C) for about 15 minutes or until golden brown
Remove from oven and let cool
Assemble the cookies in pairs, filling them with strawberry or banana filling
Make approximately 24 cookies.
