In a large bowl, combine the sugar and almonds
Transfer to a stand mixer, add the extract and egg whites, and beat for 4 minutes or until a homogeneous mass forms
Cover with plastic wrap and refrigerate for 20 minutes
In a large baking sheet lined with parchment paper, distribute the chilled dough, leaving space between each biscuit and gently flattening it with the back of a spoon
Dust with granulated sugar and bake in a moderate oven (180°C) preheated for 10 minutes or until the bottom is golden brown (check by lifting an egg white with a spatula)
Let cool, carefully remove the biscuits, and arrange them in cellophane bags with festive decorations
