Place the water in a saucepan and sprinkle the gelatin on top
Let it hydrate for 5 minutes
Bring to a low simmer, stirring until dissolved
Remove from heat, combine with sugar, jaboticaba juice, and mix well
Divide into individual servings and refrigerate for at least 4 hours
When serving, decorate with lime zest
Serve chilled
