Preheat the oven to moderate heat (170°C)
Beat the eggs in a mixer
Add the sugar and beat until it thickens
Add the shredded coconut, flour, and almond extract
Mix well
Drop the dough onto spooned (1/2 teaspoon) portions onto a greased baking sheet
Bake for 10-12 minutes, or until the edges are golden brown
Remove the cookies immediately from the baking sheet with a spatula and let them cool.
