3 1/2 cups of wheat flour

120g of crystallized orange peel, chopped

Sift together the flour, baking soda, cinnamon, cloves, and ginger
Beat the honey, brown sugar, egg, and orange juice until smooth and creamy
Add the dry ingredients to the mixture and mix with a wooden spoon
Add the crystallized orange peel and pecans
The dough will be firm and sticky
Wrap in parchment paper or aluminum foil and refrigerate for several hours or overnight
Open the dough slightly each time, over a floured surface and rolling pin also passed through flour
Cut into slices
Place on a greased baking sheet, leaving 2cm space between cookies
Bake in a hot oven for 8 minutes or until firm
Remove from the baking sheet
While still warm, cover the cookies with honey glaze, made by mixing the honey with water

Remove from heat and add Glaçúcar, beating well
Use while still warm
Decorate with crystallized cherries.
