2 cups of all-purpose flour
3/4 cup of unsalted butter, at room temperature
2/3 cup of cooked and mashed sweet potato
1/3 cup of granulated sugar
1 egg
1 pinch of salt

In a mixer, beat the butter until light and fluffy
Add the sugar and continue beating
Add the egg, salt, and sweet potato, mixing well
Gradually add the flour, mixing until a smooth dough forms
Preheat the oven to medium temperature
On a lightly floured surface, roll out small portions of the dough into desired shapes
Use a cookie cutter or the rim of a glass to cut out shapes
Place a wooden skewer in the center of each biscuit
Optional: Create a decorative border around each biscuit with a toothpick
Arrange the biscuits on a baking sheet lined with parchment paper and bake for 12 minutes, or until golden brown
Remove from oven and let cool before serving.
