Microwave the peanut butter at 30-second intervals, stirring between each interval, until smooth and creamy
Let cool
In a separate bowl, beat the egg whites until stiff peaks form
Gradually add the softened butter, beating until combined
Fold in the cooled peanut butter mixture until well combined
Add the melted chocolate and coconut flakes to the peanut butter mixture
Mix until a dough forms
Scoop tablespoon-sized balls of dough onto a parchment-lined baking sheet, leaving about 2 inches between each cookie
Bake at 375°F for 12-15 minutes or until golden brown.
