1 kg of boneless chicken
100 g of smoked bacon
3 tablespoons of butter or margarine
1 medium onion
1/4 cup of all-purpose flour
1 1/3 cups of red wine
1 1/3 cups of beef broth
salt and pepper to taste
1 sprig of thyme
chopped parsley
chopped fresh mushrooms or canned

Cut the meat and bacon into chunks
In a pan, melt the butter or margarine and sauté the onion and bacon until golden brown
Remove from heat and brown the chicken in the same fat
Sprinkle flour on top, let it brown, and add hot beef broth
Add bacon, onion, red wine, and season with salt and pepper to taste
Add thyme sprig, chopped parsley, and mushrooms
Simmer over low heat for 2 hours and a half
About 30 minutes before serving, add the sliced mushrooms
Serve six.
