The sea bass should be salted for about 4 days beforehand
Leave it to soak overnight before rinsing off the salt
Cook the abobora without letting it become too mushy
In a clay pot, place the fish cut into large chunks and on top of that, add the raw earth banana, unpeeled
Arrange the abobora and all the chopped aromatics: onion, cilantro, red bell pepper, tomatoes
Drizzle with olive oil and annatto extract
Bring to a boil, then season with salt when it starts to simmer
When the fish is tender and the banana is cooked, add the juice of 1 lime
Remove from heat
Serve in 6 portions.
