Ingredients for the pasta:
400 g of all-purpose flour
1 egg
salt
water in which spinach was cooked
Ingredients for the ragù:
200 g of ground pork
40 g of pancetta
two tablespoons (of soup) of grated carrot
one tablespoon (of soup) of grated Parmesan cheese
one tablespoon (of soup) of finely chopped onion
thyme, chopped
25 g of dried mushrooms (rehydrated in water)
1 cup of dry white wine
one tablespoon (of soup) of tomato paste
one tablespoon (of soup) of butter or margarine

25 g of butter or margarine
1/4 liter of milk

Ingredients for the white sauce:
25 g of all-purpose flour
25 g of butter or margarine
1/4 liter of milk

Brown the pancetta and butter or margarine in a pan over low heat
Add the chopped vegetables, ground pork, white wine, tomato paste, and salt
Stir well
Let it cook for about an hour
While that's cooking, prepare the white sauce by dissolving the flour in milk, then adding butter or margarine and salt
Bring to a simmer and let cook for 20 minutes
Prepare the lasagna noodles as follows: wash them, then mix with egg and flour, gradually adding water
Work well until the dough has good consistency
Roll out, pass through a pasta machine, and cut into the desired size
When the lasagna noodles are dry, cook them in boiling water for a few minutes
Drain and set aside
Assemble the lasagna by placing layers of ragù, white sauce, and lasagna noodles in a baking dish
Finish with a layer of white sauce
Top with grated Parmesan cheese and add small pieces of butter or margarine here and there
Bake in a hot oven for about 40 minutes
Serve very hot
