Combine the onion and oil in a medium saucepan
Cover and cook over low heat until the onion is well caramelized
Stir occasionally
Reserve the oil and onion separately
In a large saucepan, combine the lentils with water and bring to a boil
Simmer for 15 minutes or until the lentils are almost cooked
Add the rice and reserved oil
Season with salt
Cook until the rice is tender
Add more hot water if needed
Transfer to a serving dish and top with the onion
