Melt the sugar in a saucepan over low heat, stirring constantly until it forms a thick syrup
To test the consistency, drop a small amount of the syrup into cold water; it should immediately set
Combine the egg yolks with the flour
Add 2 tablespoons of the syrup and mix well
Gradually add this mixture to the remaining syrup, stirring constantly without stopping
Add the shredded coconut and stir over low heat until the mixture comes away from the sides of the pan and is firm
Add the vanilla
Let it cool slightly
Shape into balls with your hands and place on a baking sheet lined with butter
Bake in a moderate oven for about 15 minutes, or until the balls are golden brown
