Take a piece of cooked or fried pork and some slices of prosciutto, and process them in a food processor. Add finely chopped garlic, an egg, a splash of milk, and pepper. Place everything in a bowl and cook over low heat. Mix in flour mixed with cold water to prevent lumps from forming. Add three or four egg yolks and season with salt to taste. Let it cook for about 5 minutes and remove from heat. Allow it to cool, then scoop out portions forming meatballs. Coat them in flour, beaten eggs seasoned with salt, again in flour, and fry in hot oil.
