Combine the sugar and water and bring to a boil
Let it rise to a boil and cook until it reaches the thread stage
Remove from heat
Add the shredded coconut and egg whites and return to heat again
Cook over medium heat, stirring constantly until the mixture detaches from the sides of the pan
Remove from heat and let cool completely
Shape into balls and coat with yellow crystallized sugar
Make 60 balls (6g each).
