Filling
In a pan, combine all the ingredients except for the shredded coconut and heat over medium flame, stirring constantly until thickened
Remove from heat and add the shredded coconut
Mix well and let cool. Reserve

Preheat the oven to medium temperature
Dip a sheet of phyllo pastry in melted butter
Place another sheet on top
Cut into squares 10 cm on each side and place a small portion of the cooled filling in the center of each square

Fold each square into a roll and place in a baking dish
Repeat with the remaining dough and filling and bake for 15 minutes or until golden brown
Remove from oven and dust with confectioner's sugar
Let cool
