Preheat the oven
Beat the egg whites with 2/3 cup granulated sugar until stiff peaks form
When the mixture is smooth, add the flour; beat just enough to mix
Mix in the 6 beaten egg whites until well combined
Pour the batter into a greased 22x27cm baking dish
Bake in a moderate oven for about 20 minutes, or until golden brown on top
Let cool before removing the paper
Caramelize 2/3 cup granulated sugar in a saucepan and then add the sweet white wine
Cube the cake while still warm
Heat and stir the syrup until well mixed
Dunk the cake pieces in the syrup and then coat with cinnamon
Allow to air dry.
