Open a thin layer of the pastry over the bottom of a tart pan
Brush with egg white and poke with a fork
Open another layer of the pastry in a circle of the same diameter
Cut out circles from this pastry using a cookie cutter
Place them on top of the other pastry layer in the tart pan
Cut the circles, removed by the cookie cutter, in half and use to decorate the top of the tart
Bake in a preheated oven at 220°C until golden brown
Immediately after removing from the oven, place whipped cream on the cut-out pastry layer, alternating colors.
