3 3/4 cups of all-purpose flour
2 cups of dark brown sugar
1 1/2 cups of strong brewed coffee, cooled
1 cup of honey
1 cup of vegetable oil
1/2 cup of chopped nuts
1/2 cup of white raisins, without seeds
1 teaspoon of active dry yeast
1/2 teaspoon of baking soda
2 eggs

Baking sheet dimensions: 40 x 27 cm

Grease the baking sheet with oil and dust with flour
In a bowl, dissolve the baking soda in the coffee
In another bowl, mix the all-purpose flour with yeast
In a mixer, beat the eggs with brown sugar until smooth and creamy
Add the honey and oil and beat until homogenous
With the mixer on low speed, add the brewed coffee and flour alternately
Beat until smooth
Mix in the chopped nuts and raisins with a spoon
Heat the oven to medium temperature
Place the dough on the prepared baking sheet and bake for 20 minutes or until it starts to rise
Lower the temperature and continue baking for another 25 minutes or until a toothpick inserted comes out clean
Remove from the oven and let cool
Cut into diamonds and serve.
