Bring the water to a boil, stirring constantly, until it dissolves
Stop stirring and let it reach the thread stage
Remove from heat and add the pecans
Stir with a wooden spoon as the syrup starts to thicken
Use a skimmer to remove the pecans gradually and transfer them to a flat sieve
Let any excess syrup drain off and cool completely
Transfer to an airtight container and store until serving time.
