4 cups of well-cooked rice

1/2 teaspoon of active dry yeast
1/2 cup of chopped fresh parsley
1/2 cup of chopped scallions

1 liter of oil (or more, as needed, for frying)

In a bowl, combine the rice, eggs, cake flour, Parmesan cheese, yeast, parsley, and scallions
Season with salt and black pepper
Mix well
In a large skillet, heat the oil and fry the fritters, which should be shaped by hand one at a time
Remove with a slotted spoon, drain well, and serve immediately.
