Cut the onion into large chunks (enough to fill 1 cup)
Rub the chicken with lemon juice (or vinegar) and olive oil
Let it rest for at least 20 minutes
Place the chicken in a pot and bring it to the boil

Brown the chicken properly
When the sauce thickens, push the chicken to one side of the pot and add the smoked pork ribs, fresh pork ribs, calabrese sausage, bacon, and sun-dried meat
Let it simmer
Add water from time to time until the meats are well cooked and slightly dry
Drain the rice (well washed before), corn, calabrese sausage, bay leaves, bell peppers, tomato, and fresh parsley (if desired, add jiló too)
Simmer everything together
Add enough water to cook the rice, which should be about 3 liters
Let it cook for about 1 hour and a half
Add salt to taste
When ready, arrange the Delicious Rice Dish on a platter and top with peas, raisins, coconut, fresh parsley, cooked onion, and a drizzle of olive oil.
