In a mixing bowl, combine the two flours, salt, and olive oil, and mix well
Add warm water gradually, until the dough comes together and is not too sticky
Let it rest for at least 45 minutes

Make small balls of dough, about the size of an egg, and coat them in flour
On a stone surface, use a rolling pin to roll out each ball into a thin circle

Heat a non-stick skillet over high heat for 10 minutes, then reduce the flame
Place each dough circle in the skillet and cook for 1 minute on each side, or until browned

Use tongs or a spatula to carefully place the chapati directly over the flame, flipping it occasionally, until it puffs up
Finally, place the chapati on a grill plate of the stove to puff up even more
A little brushing with melted ghee and serving hot is all that's left!
