Leave about 1/2 pound of cod fillets to soak overnight. The next day, remove the skin and bones, then rinse thoroughly. Wrap the cod in a clean cloth and massage until it's well flaked. Cook 1/2 pound of potatoes and mash them. Then combine the mashed potatoes with the cod, add one finely chopped onion, parsley, five egg yolks (one at a time), and mix well. Finally, fold in the five beaten egg whites and beat again. Fry spoonfuls in very hot oil.
