Peel the banana and pass it through a potato ricer
In a bowl, mix together all the ingredients except for the flour
Then gradually add the flour, stirring constantly until smooth

Heat the vegetable oil over low heat
Dollop spoonfuls of dough into the oil,
increase the heat and fry until golden brown
Drain on paper towels
Mix together the granulated sugar and ground cinnamon, dusting over the warm fritters and serve.
